Antique French confit pots are closely connected to the cooking traditions of southwestern France and Provence. Long before refrigeration, these substantial earthenware vessels were used to preserve duck, goose, pork and cooking fats through the winter months.
Made from stoneware or terracotta, confit pots were often finished with yellow, ochre, honey, brown or green glaze. Their worn surfaces, graceful shapes, firing marks and weathered glazes speak to a slower, seasonal way of cooking passed from one generation to the next.
