This antique French copper daubière (braising pot) is one of those pieces that makes the whole kitchen feel more French... the minute it arrives. The size, the weight, the hand-hammered copper, the fitted lid... everything about it says long, slow country-kitchen cooking.
This copper dutch oven was not made for rushing. It was made for a daube of beef, a shoulder of lamb, or the kind of Sunday meal whose aroma fills the house as the flavors come together. It's a special piece made for a large family.
Known in France as a daubière, this large copper braising pan likely dates from the 19th century. It was made for slow cooking over gentle heat. The fitted lid has raised sides, a practical detail that likely allowed hot coals or embers to be placed on top during slow braising, giving heat from above as well as below.
The interior is tinned and still in usable condition, making this both a collector’s piece and a serious piece of cookware. The copper is hand-hammered throughout, with castellated dovetail seams running up the sides and around the base, a beautiful sign of traditional French copper construction.
The scale is what sets this example apart. Most surviving daubières are smaller, but this one stands approximately 20 cm tall and measures approximately 45 cm from handle to handle. It weighs nearly six kilograms, giving it the presence and substance of a true working piece of history.
